the fright
to hope
to dream
to sleep tonight
with pure delight

well rested
invested
in a new day
a new way
to avoid the games my head may play
my mind is ever turning
and yearning
for learning
but this is my admission
sometimes my mind seems like a juxtaposition
between lion and limpy gazelle
the heat change between heaven and hell
the concept of a kid stuck in a wishing well
that’s swell
let me clarify
or just simplify
I’m physically exhausted from running circles in my head
you’d think I’d sleep when I hit the bed
but then my brain
like a children’s train
goes in circles again

Multi Colored Carrot Chips

This is my take on the various recipes for carrot chips out there, it’s very simple and tastes great.

I bought a Multi Colored Packet of Carrots, but hadn’t eaten them.

Multi Colored Carrots

As a single man it’s hard to eat a whole bag of carrots before they go bad.

Then an invitation to a “game night” party arrived in my inbox, and all of a sudden too many carrots became the perfect amount.

I used the slicer function on my food processor, to thinly slice them.

Brushed them with olive oil, and placed them on parchment paper on a baking sheet.

Yes there are many different colors for carrots, however, they all taste the same.

Set the oven to 350* Fahrenheit, and after around 30 minutes, voila!

When all the batches were finished, they looked like this.

They were quite a hit at the party, even though someone thought they were potpourri at first.

Here are the instructions if you wish to try them for yourself.

Ingredients –

  • 1 bag of  Multi Colored Carrots

  • a few tablespoons of olive oil

  • garlic salt

  • parchment paper

Instructions –

  • Preheat oven to 350* Fahrenheit

  • Rinse carrots, and remove tops

  • Slice carrots thinly or in a food processor

  • Place 1/2 tablespoon olive oil on parchment paper and spread evenly

  • Place a single layer of carrots on parchment paper, turn them over once so that they are “lightly” coated in the olive oil present on the paper. (Too much olive oil will cause you to fry them instead of bake.)

  • Shake a small amount of garlic salt over coated chips. (You may always add more later.)

  • Place in oven, after 15 minutes remove, flip carrots and cook until brown on edges.

  • Let cool and place in a serving dish.
